I made a few changes to the official recipe. 


  • 2 cups all-purpose flour
  • 2 eggs
  • 2 cups white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup butter
  • 1/4 cup tablespoons unsweetened cocoa powder
  • 1 cup Coca Cola

Sift together flour, sugar,soda and cinnamon, set aside. In a saucepan, melt butter add cocoa and coca cola. Pour hot sauce into flour mixture. Mix with a spoon. Add in eggs and vanilla. Pour into pan and bake at 350 for 30 minutes. Don't over bake. Toothpick should come out clean. Take out cake and let cool.


In saucepan melt butter with the buttermilk,cola,cocoa power.

  • 1/2 cup cola-cola carbonated beverage
  • 1/2 cup buttermilk
  • 1/2 cup butter
  • 1/4 cup  unsweetened cocoa powder
  • 4 cups confectioners' sugar
  • 1 cup chopped pecans

Here is the recipe I used for the cake. There are variations on the internet. Some use marshmallows , I didn't, I used powdered sugar. 

Coca Cola Cake

When it comes to a boil, add in powdered sugar and pecans. Stir until smooth. Pour on top of the cake. Wait a bit. Eat warm or cold. Add vanilla ice cream. You can heat it up in the microwave if you like it warm.

Welcome and thanks for visiting my MINUTES WITH MARY Blog! I am so glad you have joined me.

This site is a companion to my MINUTES WITH MARY videos where I will post links to the books, meditations, recipes and downloads I share on my You Tube channel.

So, why Blog? Well to be honest, I have put it off for a long time. But when challenged, I realized there is so much I want to share and it would be too much for a video or a Facebook post.

I always thought my second book would be a follow up book to LESSONS FROM THE MOUNTAIN, WHAT I LEARNED FORM ERIN WALTON.  The reason? All of you.

 I asked you what you thought my next book should be, you felt it should answer how I conquered my “mountain.” You wanted to know how I came out the other side. We tried not to be “preachy” in LESSONS, so some solutions were not included. Of course, my coaching training and practice is a HUGE part of my personal solutions.

I thought a follow up book was the best way to answer how I deal with lupus, body image issues, being a stepmother, mom, wife, blending a family, Walton questions, gardening, cooking, being a foodie, chronic fatigue and the grey cloud that often invades my positive outlook. Well, that book did not happen. 

But…I still feel the need to answer your questions, so my MINUTES WITH MARY videos and blog seemed the best way to share my experiences.

You’ll find information on my books, assorted writings, workshop manuals, coaching tips, and what I experience in my life and practice.

Take what you like, share what you want, implement what works, and know it comes from my heart.

This is a place to share. I hope you enjoy this space. I am excited to share it with you.
